Biltong is a simple and mouth-watering dried beef delicacy from South Africa . It evolved from the dried meat carried by the wagon-travelling Dutch Voortrekkers who arrived in South Africa in the 17th century. They needed stocks of durable food as they migrated from the Cape Colony north-eastward into the interior of Southern Africa during the Great Trek. Preparation involved applying vinegar, then rubbing the strips of meat with a mix of herbs, salts and spices. The raw meat was preserved and within a fortnight would be fully cured and hardened. They discovered that not only would the meat last for months, but it also had a rich, stimulating flavor, and pleasant texture- creating a nutritious high protein snack.
